Redhawk Gastropub Designed to Fill a Need, as Well as Tummies

Dan Willie grew up in Malad, his ancestors having come from England and traveling westward across America with the Mormon handcart brigade. When he realized his adopted home of Twin Falls was in need of a place that nonprofits could hold fundraisers and conventions, he responded by building Redhawk Gastropub, naming it for a red hawk that frequents the canyon below.

The restaurant, at 330 Canyon Crest Drive on Twin Falls' canyon rim, now caters to parties ranging from one or two to 400. It offers a robust line of seafood dishes, including sustainable Riverence trout grown at the bottom of the Snake River Canyon, a seafood cioppino filled with clams, mussels and even octopus, and a honey garlic blackened salmon. It also features ribeye steak with demi-glace and various chicken dishes.

The restaurant will host an Easter Buffet from 10 a.m. to 3 p.m. March 31, featuring omelet, salad and dessert stations, as well as such items as peppercrusted prime rib, pan seared salmon in a tomato sauce and honey baked ham. Learn more about the restaurant in today's Eye on Sun Valley video.
