Student Chefs to Offer Pop Up Brunch Buffet

This year’s students at the Sun Valley Culinary Institute are preparing a pop-up brunch buffet.

Sun Valley Culinary Institute students will present a pop-up brunch from 11 a.m. to 2 p.m. Friday, May 10.

The first seating of SVCI Bistro 211 will be from 11 a.m. to 12:30 p.m.; the second will be from 12:30 to 2 p.m. at the Sun Valley Culinary Institute, 211 Main St.

“Our 2024 class of SVCI students have been working for months to gain an understanding and grasp what it takes to work and thrive in the food service industry,” said SVCI Lead Chef Instructor Joseph C. Tocci. “Honing their skills and knowledge, the students are excited to present a pop-up brunch to connect to the community, and one day soon enter the valley or elsewhere hospitality workforce to create a memorable dining experience.”

The buffet items will include an omelet station with a choice of mushrooms, onion, tomato, spinach, ham and cheddar cheese and a carving station of roasted pork loin. The buffet will also include French toast, sage sausage, bacon, roasted fingerling potatoes, rice pilaf and sautéed mixed vegetables with a citronette citrus dressing.

In addition, the students will offer chicken marsala, a mixed garden salad with house vinaigrette and house-made dinner rolls. The dessert table will feature assorted fruit, pot de crème and strawberry shortcake biscuits.  

Coffee, tea and juice will accompany the buffet. Wine, champagne, beer and sparkling water will be available for purchase.

COMING UP:

Chef Laurent Loubot will present an evening of French cuisine at 6 p.m. Sunday, May 26. The dining experience will include tomato tarts with basil pesto, Alaska Halibut Provençal accompanied by polenta and petite ratatouille draped in a saffron beurre blanc and floating islands for dessert.

Pizza Night with Rico Albright will be held at 6 p.m. Friday, May 31. He will share tips for making pizza as he creates them during dinner.

The Sun Valley Culinary Institute’s Summer Soiree on Saturday, June 22, still has a few tickets available. The event at a private home will feature dishes prepared by celebrity chef Art Smith and Food Network insider Bruce Seidel. There’ll be dance music by DJ SID3S and an auction.
