Saturday, May 1, 2021

Marie Gallo found Idaho had a lot in common with her childhood home of Belgium when she moved here. Namely, its famous potatoes. Belgians are made about potatoes, eating them at every turn in the road.

Watch as she shares her favorite Scalloped Potato recipe. It takes just minutes to prepare but will leave your tummy very happy.

3 medium Idaho Russet potatoes

2 cups whipping cream (or, 1 cup cream and 1 cup 2 percent milk)

1 teaspoon salt

1 teaspoon pepper

¼ teaspoon nutmeg

1 clove garlic, diced

Slice potatoes into thin slices. Pour whipping cream into cooking pan; add salt, pepper and garlic. Bring liquid to a boil.

Spread a little butter in baking dish; rub garlic on pan bottom to add flavor. Scoop some cream on the bottom. Top with a layer of potatoes. Spoon another layer of cream on top of that. Add another layer of potatoes. Spoon more cream atop.

Bake 45 minutes in preheated 400-degree oven until browned.
